Tailoring guidelines for a service industry

Can you share your thoughts and approach on how you define the tailoring guidelines for a service industry?

In the modern world I think button-down collars are out, but I personally have no objection to a buttoned shirt pocket. Where jackets are called for, clearly lapels should be narrow, and please only one button on the cuffs - this isn't the Navy or a Florida condo.
